FOOD: Delicious Shrimp Pockets

Welcome back to The Bake!

Americans reportedly are eating more shrimp than ever before.

According to the National Oceanic and Atmospheric Administration, Americans ate 19 pounds of seafood per capita in 2020, down slightly from 19.3 pounds in 2019.

As the New York Times noted, shrimp is no longer viewed as the kind of delicacy flaunted at weddings next to the caviar.

Many view shrimp as a value ingredient, “something to pluck out of the freezer and toss into your waiting pan of buttery garlic whenever you need a speedy, convenient dinner.”

This week’s bake is unique because it is inspired by my mom’s recipe.

She made shrimp adobo which was absolutely mind-blowing.

With that, I knew I had to make a bake for it.

Thanks to her, I made the most delicious bake yet!

Of course, you can season the shrimp however you want, but the seasonings my mom used make it truly delicious. I used lots of garlic, peppers, adobo, and other flavors. It paired so well with the flaky pastry and tender shrimp. And they are super easy to make!! I hope you enjoy and have a wonderful bake!

Ingredients 

  • 1 cup shrimp, de-veined and de-shelled
  • 1/4 cup diced onion
  • 1/4 cup diced peppers
  • 3 cloves garlic
  • Salt, to taste
  • Pepper, to taste
  • Smoked paprika to taste
  • Adobo powder, to taste
  • Sazon to taste
  • Garlic powder to taste
  • Old Bay to taste
  • 1 tsp lemon
  • I sheet phyllo dough
  • 1 egg

 

Instructions 

  1. Preheat the oven to 350 degrees F
  2. In a cast iron pan, heat oil over medium heat. Add in onions and peppers and season. Add the garlic and cook until onions and peppers are translucent. Transfer into a bowl and set aside.
  3. Season shrimp, then cook in the same pan in which you cooked the onions and pepper until pink. Set aside.
  4. Crack the egg and add about 1 tbsp of water, then mix.
  5. Cut the phyllo sheet into squares. Put a small number of onions and peppers into the center of the square. Put two shrimp on top. Then, egg wash all for borders. After that, fold the corners into the center, and egg wash the surface.
  6. Bake for 10-12 minutes or until golden.
  7. Enjoy!!!
